New Recipe

So I'm trying to cut back on carbs after our teacher/personal trainer Patti told me not to have carbs for dinner and to eat nothing after 7:30 p.m. Well, we usually eat dinner around 9, so I have to try the no carbs part at least! I made this chicken and broccoli casserole for dinner last night and it was good! Next time I make it, I'll bake it covered with foil so that the cheese doesn't get so brown.

Chicken & Broccoli Casserole

Ingredients
1 C. real mayonnaise
8 oz. cream cheese
1/2 pt. heavy cream (I substituted a 1/2 C. of Skim Milk and 2 Tbsp. Sour Cream for this)
2 C. fresh broccoli
Lots of cooked chicken in chunks (About 4-5 breasts)
2 Tbs. lemon juice (I didn't use any of this)
2 C. shredded cheddar cheese
1 tsp. garlic (can be omitted)
1/2 tsp. pepper
2 chicken bouillon cubes

Directions
Line a 9x13 dish with broccoli, place chunked chicken on top. In a saucepan, place cream cheese, mayonnaise, cream, lemon juice, garlic, pepper, and bouillon cubes. Turn on low heat and stir until cream cheese melts and is mixed. Pour sauce over chicken. Top with cheddar cheese. Bake for 1 hour at 350 degrees (cheese may get brown, check at 45 minutes).

DJ and I had so much fun throwing a surprise engagement party for Justin & Heidi at our house last Friday. Congrats again!

DJ's brothers took their starter calves and steers to the fair. They showed on Tuesday and it was so fun to watch them! Here's a video of Jake showing his starter calf.

So much news!

There's so much to tell this week!

First off - Heidi and Justin are FINALLY engaged!!! He proposed to her last Friday. We had a surprise engagement party for them right after he asked her. Heidi, were you surprised or what?!?! Congratulations to you both. Welcome to the family, Heidi!

Second - Lindsay and Dan were quite the team at the Fair on Monday. Together, they won first place in First Year Western Pleasure and Second in First Year Western Horsemanship. I'm so proud! Way to go Linz!

Carrie Underwood

I love Carrie Underwood. I just bought the Carnival Ride CD. The song "Last Name" is my favorite. I LOVE the video too.

Zach Attack

Isn't Zach the cutest?! Here's a picture of him kayaking in Florida. Matt, Jennifer and the boys spent a week or so with mom and dad in June. Happy Birthday Zach! (Zach turned 8 last Friday.)

Lake Wawasee 2008!

We had a great time during our 4th annual trip to Lake Wawasee this year. The house was awesome. Best parts of the trip:

• Heidi and Heather on the boat the first weekend...you know what you did. :)


• Going to the open house across the street and dreaming about buying!


• Getting Guitar Hero for my birthday!!!


• Phil's yummy muscles (okay that sounded a little weird...he cooked muscles for us for dinner.)


• The fireworks on Lake Wawasee.


• Alissa's cute little bump in her yellow bikini!! I hope little Cameron will be ready for next year's trip.
